Protein and Starch- Ramen Noodles with Umami Tomato

Recipe Ingredients:

200g Ramen Noodles

2 Cherry Tomatoes, halved

For the Tomato Sauce:

4 Cherry Tomatoes

1 Clove Garlic

60 ml Vegetable Oil

90 ml Rice Vinegar

60 ml Soy Sauce

1 tbsp Sesame Seeds

Salt + Pepper

For the Miso Egg Yolk:

3 tbsp Sake

3 tbsp Mirin

1/3 cup White Miso

1/2 cup Granulated Sugar

2 Egg Yolks

Recipe Instructions:

To make the miso egg yolks, boil the sake and mirin over a high heat and reduce by a third. Turn down the heat, add the miso and sugar, and stir constantly for 2–3 minutes. Bring to room temperature, then pour into a small bowl. Cover with a coffee filter, place the egg yolks on top, and marinate for 1 day.

To make the tomato sauce, blend all the tomato sauce ingredients together until smooth in a plastic bowl with a hand mixer.

Cook 100g ramen noodles per person, or 2 packets if using instant ramen, discarding any flavourings. Boil for 3–4 minutes, rinse thoroughly under cold water and drain.

Toss the noodles with the tomato sauce in the pot. Serve topped with the quartered tomatoes, and the shiny miso egg yolk.

Self-Reflection and Feedback

The recipe went very well. I did this recipe over the course of a couple days and it went smoothly.

It turned out super delicious. I was delightfully surprised about the egg, because I was a bit on the fence about it but I wanted to be adventurous. The tomato sauce was super yummy too.

I really liked the recipe, the only thing I did not really like about it was that we had to wait overnight for the eggs to marinate, however it was worth it in my opinion.

I would definitely cook this again.

I do not think I would really change anything with this recipe in the future.

I would rate myself a 9/10, the original recipe said to let the eggs marinate for 3 days, however I did not have that kind of time and I also did not feel super comfortable leaving an egg out for three days…

I got my dad and brother to try it, and they both really enjoyed it and they said that they really liked the tomato sauce especially.
