Appetizer: Roasted Miso Cauliflower

Ingredients:

1 head of cauliflower, sliced into pieces

1 head broccoli, slices into piecces

30 g pine nuts

1 jalapeno, chopped

1 1/2 cups sake

1 1/2 cups mirin

2 cups sugar

Sprinkle of Togarashi pepper

Equipment Needed:

Recipe Instructions:

To make the miso, boil the sake and mirin over a high heat and reduce by a third. Turn down the heat, add the miso and sugar, and stir constantly for 2–3 minutes. Bring to room temperature.

Place the cauliflower and broccoli in a bowl and pour over the miso to cover. Leave for 2–3 hours.

Preheat the oven to 350°F. Remove the sliced vegetables from the miso marinade and sear in a hot frying pan until golden. Place onto a baking tray with the pine nuts and bake in the oven for 3–5 minutes.

Arrange the cauliflower and broccoli on a plate, and finish with a sprinkle of pine nuts and the chopped jalapeño.

Self-reflection and feedback:

The recipe turned out really well, I really liked the finished product, it tasted really good. The only thing I will say about this recipe is that it takes a couple of hours to make, so if you are in a time crunch I feel like this wouldn’t be the appropriate recipe. However, if you do have time, I would definitely suggest giving this recipe a try.

As I mentioned previously, it turned out really good. It is quite a salty marinade, and I think that the pine nuts, the pepper and the jalapeno compliment it very well.

I would say the recipe itself is not very challenging, however it is time consuming and to find some of these ingredients was a bit of a struggle and we had to go to a couple of Asian stores to find some of these ingredients.

I would totally make this again! The original recipe states that you can make this with any sturdy, crunchy vegetable, so I think that in the future trying it with other vegetables would be cool.

I don’t really think that there would be much that I would change in the future personally.

I would give myself a 9.5/10 just because while searing the vegetables it was not as golden brown as I wanted it to be, however after baking it everything turned out fine.

My entire family really liked it. My entire family really likes Asian food, so they very much enjoyed this dish.
